做法(fǎ ):春(chūn )笋切成片后加少许盐(yán )捞出后用清(qīng )水浸泡(pào ),生姜(jiāng )切片(piàn ),葱(cōng )切成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
