做法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量(liàng )清水半掩住(zhù )春笋,盖上锅(guō )盖大火煮开(kāi )后(hòu )转中火。煮(zhǔ )到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
