做法:洗净宰好鲫鱼,洗净淮山和(hé )薏米。用清水把陈皮泡软(ruǎn ),拍裂(liè )一小块姜,热锅,用姜块在锅上(shàng )擦(cā )一遍(biàn ),放两勺(sháo )油,待油六成(chéng )热下鱼,煎至(zhì )微(wēi )黄。煮沸瓦(wǎ )煲里的清水,放(fàng )入煎煮好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火煲一个半小时,下盐调味(wèi )即(jí )可品尝。
