做法:春笋切成片后(hòu )加(jiā )少许盐捞出后用清水浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油(yóu ),放(fàng )入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩(yǎn )住春笋,盖(gài )上(shàng )锅盖大火煮开后转中火(huǒ )。煮(zhǔ )到水快熬干的时候加入(rù )盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
