做法:洗净宰好鲫(jì )鱼,洗净淮山和薏(yì )米。用(yòng )清(qīng )水把陈皮泡(pào )软,拍裂(liè )一小块姜,热锅,用姜(jiāng )块在锅上擦一遍,放(fàng )两勺油,待油六成热下鱼,煎至微黄。煮(zhǔ )沸瓦煲(bāo )里的清(qīng )水,放入煎煮好的鲫鱼和(hé )其他(tā )材料,武火煮沸,转中小(xiǎo )火煲一个半小时,下盐调味即可品(pǐn )尝。
