做法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住(zhù )春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水(shuǐ )快(kuài )熬干的(de )时候(hòu )加入(rù )盐,翻炒均匀(yún )稍(shāo )收汁时盖上锅(guō )盖焖。
