做(zuò )法:春笋切成片(piàn )后加少(shǎo )许盐捞出后用(yòng )清(qīng )水(shuǐ )浸泡,生姜切(qiē )片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春(chūn )笋、牛肉(ròu )片、葱段(duàn )翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻(fān )炒均匀稍(shāo )收汁(zhī )时盖上锅盖焖。
