做(zuò )法:春(chūn )笋切成(chéng )片(piàn )后加少(shǎo )许盐捞出后(hòu )用清水浸泡,生姜切(qiē )片(piàn ),葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻(fān )炒均(jun1 )匀,加入少量清水半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收(shōu )汁时盖上(shàng )锅盖焖。
