做法:春笋(sǔn )切成片后加少许(xǔ )盐捞(lāo )出后用清水浸泡,生(shēng )姜(jiāng )切片,葱切(qiē )成段。锅(guō )烧热(rè ),倒入2勺油(yóu ),放入(rù )生姜(jiāng )、春笋、牛肉片、葱段翻炒1分(fèn )钟左右(yòu )。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清水(shuǐ )半掩(yǎn )住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
