做法:洗(xǐ )净宰好鲫鱼,洗净淮(huái )山和薏米。用清水把(bǎ )陈皮(pí )泡软(ruǎn ),拍裂一小块姜,热(rè )锅,用(yòng )姜(jiāng )块在锅上(shàng )擦一遍,放两勺油,待(dài )油(yóu )六成热下鱼,煎至微(wēi )黄。煮沸瓦煲里的清水,放入煎煮好的鲫(jì )鱼和(hé )其(qí )他材(cái )料,武火煮沸,转中小火煲一个半(bàn )小时,下盐调味即可品尝。
