做法:洗净宰好鲫鱼,洗净淮山(shān )和薏米。用清水把(bǎ )陈皮泡软,拍裂一(yī )小块(kuài )姜,热(rè )锅(guō ),用姜块在锅上擦一遍(biàn ),放两勺油,待油六成热下鱼(yú ),煎至微(wēi )黄。煮(zhǔ )沸瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼和其他(tā )材料,武(wǔ )火煮沸,转中小(xiǎo )火(huǒ )煲(bāo )一个半小时,下(xià )盐调味即可品尝。
