做法(fǎ ):洗(xǐ )净宰好鲫鱼,洗净淮山和(hé )薏米。用清水把陈皮泡软,拍(pāi )裂一小块姜(jiāng ),热锅,用姜(jiāng )块在锅上擦(cā )一遍,放两勺(sháo )油,待油六成热下鱼,煎至微(wēi )黄。煮沸瓦(wǎ )煲里的清水,放(fàng )入煎煮好的(de )鲫鱼和其(qí )他(tā )材料,武火煮沸,转(zhuǎn )中小火煲一个半小时,下盐调味即可品尝。
