做(zuò )法:洗(xǐ )净宰好(hǎo )鲫鱼,洗净淮山和(hé )薏米。用清水把陈皮泡软,拍裂一小(xiǎo )块姜,热锅,用姜块在(zài )锅上擦一遍,放两勺(sháo )油,待油(yóu )六成热下鱼,煎至(zhì )微黄。煮沸瓦煲里的清水,放(fàng )入(rù )煎煮好的(de )鲫鱼和其他材料,武火煮沸,转中(zhōng )小火(huǒ )煲(bāo )一个半(bàn )小时,下盐调味即可(kě )品尝。
