做法:春笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均(jun1 )匀,加入少量清水半掩住(zhù )春笋,盖(gài )上(shàng )锅盖大(dà )火煮开后转中火。煮到水快(kuài )熬干的时(shí )候加入(rù )盐(yán ),翻炒(chǎo )均(jun1 )匀(yún )稍(shāo )收汁时(shí )盖上锅盖焖。
