做法:春笋(sǔn )切成片后加少许盐捞出后(hòu )用清水浸泡(pào ),生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清(qīng )水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮(zhǔ )开后(hòu )转(zhuǎn )中(zhōng )火。煮到水快熬干的时(shí )候加入盐,翻炒(chǎo )均匀稍收汁时盖上(shàng )锅盖焖。
