做法:春笋切成片后加少(shǎo )许(xǔ )盐捞出后(hòu )用(yòng )清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段(duàn )翻炒(chǎo )1分钟左(zuǒ )右。再(zài )加入生抽(chōu )、老抽(chōu )、蚝油翻炒均匀,加入(rù )少量清(qīng )水半掩住春笋,盖(gài )上锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
