做法:春笋切成片后(hòu )加少许(xǔ )盐捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖(gài )上锅盖大火(huǒ )煮开后转(zhuǎn )中火(huǒ )。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒均(jun1 )匀(yún )稍收汁时盖上锅(guō )盖焖。
