做(zuò )法:洗净宰好鲫鱼,洗净淮(huái )山和薏(yì )米。用清(qīng )水把陈皮泡软,拍裂一(yī )小块姜,热(rè )锅,用姜块在锅上擦一遍(biàn ),放两勺油,待油六成(chéng )热下(xià )鱼,煎(jiān )至微黄(huáng )。煮沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其他材(cái )料,武(wǔ )火煮沸,转中小火煲一个半小时,下盐调(diào )味(wèi )即可品尝。
