做(zuò )法:春笋(sǔn )切成片后加少许盐捞出(chū )后用清水浸(jìn )泡,生姜(jiāng )切(qiē )片,葱切成段。锅(guō )烧热(rè ),倒入2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左(zuǒ )右。再加入生抽(chōu )、老抽、蚝油(yóu )翻炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻(fān )炒均匀稍收汁时盖(gài )上锅盖(gài )焖。
