做法:洗净宰好鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮泡软(ruǎn ),拍(pāi )裂一小块姜,热(rè )锅,用(yòng )姜块在锅上擦一遍,放两勺油,待油六成热下(xià )鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水,放入煎(jiān )煮好的鲫鱼和其他(tā )材(cái )料,武火煮(zhǔ )沸(fèi ),转中(zhōng )小火煲一个(gè )半(bàn )小时,下盐调味即可品尝。
