做法:春笋切成片后加(jiā )少许盐(yán )捞出后用清水浸(jìn )泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入(rù )生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半(bàn )掩住春笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水快熬(áo )干的时候加(jiā )入盐,翻(fān )炒均匀稍收汁时盖上锅盖(gài )焖。
