做(zuò )法:春(chūn )笋切成片(piàn )后加少许盐捞出后(hòu )用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒(chǎo )1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春(chūn )笋,盖上锅(guō )盖大(dà )火(huǒ )煮开后转中火。煮到(dào )水快熬干的(de )时候加入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上锅盖焖。
