做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入少量(liàng )清(qīng )水(shuǐ )半掩住春笋,盖上锅盖大火煮开后(hòu )转(zhuǎn )中火。煮到(dào )水(shuǐ )快熬干的时候加入(rù )盐,翻炒均(jun1 )匀稍收汁时盖上锅盖(gài )焖。
