做法:洗净宰好鲫鱼(yú ),洗净淮山(shān )和薏(yì )米。用清水把陈皮泡软,拍裂一(yī )小块姜,热锅(guō ),用姜(jiāng )块(kuài )在锅上擦一遍,放两勺(sháo )油,待油六成(chéng )热(rè )下鱼,煎至微黄。煮沸瓦煲(bāo )里(lǐ )的清水,放入煎煮好的鲫鱼(yú )和其(qí )他(tā )材料,武火煮(zhǔ )沸,转中小火煲一个(gè )半小时,下盐调味即可品尝。
