做法:春笋切成片后加(jiā )少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半(bàn )掩住春(chūn )笋,盖上锅(guō )盖(gài )大(dà )火(huǒ )煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖(gài )焖。
