做法:春笋(sǔn )切成片后加少许盐(yán )捞(lāo )出后用(yòng )清水浸(jìn )泡,生姜切片,葱切(qiē )成段(duàn )。锅(guō )烧热,倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入少量(liàng )清水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到(dào )水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀(yún )稍收汁(zhī )时盖上锅(guō )盖焖。
