做法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮泡软,拍裂一(yī )小块姜,热锅,用姜(jiāng )块在锅(guō )上擦一遍,放两勺油,待油六成热下鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦煲里的清水(shuǐ ),放入煎煮好(hǎo )的鲫鱼和其他材料,武火煮沸,转中小火(huǒ )煲(bāo )一(yī )个半小时,下盐(yán )调味即可(kě )品尝(cháng )。
