做法:洗净宰好鲫鱼(yú ),洗净(jìng )淮山和薏(yì )米。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用(yòng )姜块在锅上擦一遍,放两勺油,待油(yóu )六成(chéng )热下(xià )鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其(qí )他材料,武火煮沸,转中(zhōng )小火煲一(yī )个半小时,下盐(yán )调味即可品尝。
