做法:春笋切成片后加少许(xǔ )盐捞(lāo )出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段(duàn )翻炒1分(fèn )钟左右。再(zài )加(jiā )入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀(yún )稍收汁(zhī )时盖上锅盖焖。
