做法:春笋切成(chéng )片(piàn )后加(jiā )少许(xǔ )盐(yán )捞出(chū )后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺(sháo )油,放入生(shēng )姜、春(chūn )笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
