做(zuò )法:春笋切(qiē )成片(piàn )后加少许盐捞出(chū )后用(yòng )清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清(qīng )水半掩住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中(zhōng )火。煮到水快熬干的时(shí )候(hòu )加入盐,翻炒均(jun1 )匀稍收(shōu )汁时盖上锅盖焖(mèn )。
