做法:春(chūn )笋切成片后加(jiā )少许盐(yán )捞出后用清水浸(jìn )泡(pào ),生姜切片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺油(yóu ),放入(rù )生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分(fèn )钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收(shōu )汁时盖上锅盖焖。
