做法:洗净(jìng )宰(zǎi )好鲫鱼,洗净淮山和(hé )薏(yì )米(mǐ )。用清水把陈(chén )皮泡软,拍裂一小块姜,热锅,用姜块在锅上(shàng )擦(cā )一遍,放两勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和其他材料(liào ),武火煮沸,转中小(xiǎo )火煲一(yī )个半小时,下盐调味即可品尝(cháng )。
