做(zuò )法:洗净宰(zǎi )好鲫鱼,洗(xǐ )净淮山和薏(yì )米。用清水把陈皮泡(pào )软,拍裂一(yī )小块姜(jiāng ),热锅,用姜块在锅上擦一遍,放两勺油,待油六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲(bāo )里(lǐ )的清水,放(fàng )入煎煮好的鲫鱼和其(qí )他材料(liào ),武火(huǒ )煮沸,转中(zhōng )小火煲(bāo )一个半小时,下盐调味即可品尝。
