做法:春(chūn )笋切(qiē )成(chéng )片(piàn )后加少许盐(yán )捞出后(hòu )用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时(shí )候加入(rù )盐(yán ),翻炒(chǎo )均匀稍收汁(zhī )时盖上锅盖焖。
