做法:洗净宰好鲫鱼,洗净淮(huái )山和薏(yì )米。用清水把陈皮泡软(ruǎn ),拍裂一小(xiǎo )块姜(jiāng ),热锅,用姜块在(zài )锅上(shàng )擦一遍(biàn ),放两勺油(yóu ),待油(yóu )六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的清(qīng )水,放入煎煮好的鲫(jì )鱼和其他材料,武火煮沸(fèi ),转中小火(huǒ )煲一个半小时(shí ),下盐调味即可品尝。
