做(zuò )法:春笋切成片(piàn )后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半(bàn )掩住(zhù )春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒均匀(yún )稍(shāo )收汁时盖上锅盖(gài )焖。
