做(zuò )法:春笋(sǔn )切成(chéng )片后加少许盐捞出后(hòu )用清水浸泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒(chǎo )均匀,加入少量(liàng )清水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水(shuǐ )快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
