做法:洗(xǐ )净宰好鲫鱼,洗净淮山(shān )和薏米。用清水(shuǐ )把陈皮泡软,拍裂一(yī )小(xiǎo )块姜(jiāng ),热锅,用(yòng )姜块在锅上擦一遍,放两勺油,待油六成(chéng )热下鱼,煎至微(wēi )黄。煮沸瓦(wǎ )煲里的清水(shuǐ ),放(fàng )入煎煮好的鲫鱼(yú )和其(qí )他材料,武火煮沸,转(zhuǎn )中小火煲一个半小时,下盐调(diào )味(wèi )即可品尝。
