做法:春笋切成片后加(jiā )少许(xǔ )盐(yán )捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺油(yóu ),放入生姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍(shāo )收汁时(shí )盖上锅盖焖。
