做法:春笋切成片后加少许盐捞(lāo )出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒(chǎo )均匀,加入(rù )少(shǎo )量(liàng )清(qīng )水半掩住春笋,盖上(shàng )锅盖(gài )大火煮开后转中火。煮到水快熬干的(de )时(shí )候加入(rù )盐,翻炒均(jun1 )匀稍(shāo )收汁(zhī )时盖上锅盖焖。
