做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮(pí )泡软(ruǎn ),拍裂(liè )一小块姜,热锅,用(yòng )姜块在锅上擦一遍,放两(liǎng )勺油,待(dài )油六成热下鱼,煎至微(wēi )黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和(hé )其他材(cái )料(liào ),武火煮沸,转(zhuǎn )中小火煲一个半(bàn )小时(shí ),下盐调(diào )味即(jí )可(kě )品尝。
