做法:春笋切成片(piàn )后加(jiā )少许盐捞(lāo )出后用清水(shuǐ )浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右(yòu )。再加(jiā )入生抽、老抽(chōu )、蚝油翻(fān )炒(chǎo )均(jun1 )匀,加入少量清水半掩住(zhù )春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻(fān )炒(chǎo )均匀稍收汁时盖上锅盖焖。
