做法:春(chūn )笋切成片后加少(shǎo )许(xǔ )盐(yán )捞出后用清水浸泡(pào ),生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油(yóu ),放入生(shēng )姜、春笋(sǔn )、牛(niú )肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加(jiā )入少量清水半掩住春(chūn )笋(sǔn ),盖上锅盖大(dà )火煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖(gài )焖。
