做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生(shēng )姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入(rù )生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少(shǎo )量清水半(bàn )掩住春(chūn )笋,盖上锅盖大(dà )火(huǒ )煮开后转中火。煮到水快熬(áo )干的(de )时候加入盐(yán ),翻(fān )炒(chǎo )均匀(yún )稍收汁(zhī )时盖上锅盖焖。
