做法:洗净宰(zǎi )好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍裂一(yī )小块姜,热锅,用(yòng )姜块在锅(guō )上擦一(yī )遍,放两(liǎng )勺油,待油(yóu )六成热(rè )下鱼,煎(jiān )至微黄。煮沸瓦煲(bāo )里的清水(shuǐ ),放入煎煮好(hǎo )的鲫鱼和其他材料(liào ),武(wǔ )火煮沸,转中(zhōng )小火煲(bāo )一(yī )个半小时,下盐调味即可(kě )品尝。
