做法:洗(xǐ )净宰(zǎi )好鲫鱼,洗净淮山和薏(yì )米(mǐ )。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上擦一(yī )遍,放两勺油,待(dài )油六成热下鱼,煎至微黄(huáng )。煮沸瓦(wǎ )煲里的清水,放入煎煮(zhǔ )好的鲫鱼和(hé )其他材料,武火煮沸,转中小火煲(bāo )一个半(bàn )小时(shí ),下盐(yán )调味即可品尝。 -
