做法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用(yòng )姜块在锅(guō )上(shàng )擦一(yī )遍,放两勺油,待油(yóu )六成热下鱼,煎至微黄。煮沸瓦煲(bāo )里的清水,放入煎煮好的鲫鱼和其他材(cái )料(liào ),武火煮沸,转(zhuǎn )中小火煲一(yī )个半小时(shí ),下盐调味即可品尝。 -
