做法:洗净(jìng )宰好鲫鱼(yú ),洗(xǐ )净淮(huái )山和薏米。用清水把陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜块(kuài )在锅上擦一遍,放两(liǎng )勺(sháo )油,待油六成热(rè )下鱼,煎(jiān )至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫(jì )鱼和其他材(cái )料,武火煮沸,转(zhuǎn )中小火煲(bāo )一个半(bàn )小时,下盐调味(wèi )即可品尝。
