做(zuò )法:春笋切成片后加(jiā )少许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水半掩(yǎn )住春(chūn )笋,盖(gài )上锅盖大火煮开(kāi )后(hòu )转中(zhōng )火。煮到水快(kuài )熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
